This wine is a Burgundy appellation produced in the
Côte Chalonnaise. It is made with a selection of our best
grapes produced on our Domaine in Mercurey, 24
hectares grown organically since 2008.
The soils are clayey marl, with a good limestone
proportion. More than 50% of the vines here are aged 25
years or more.
Manual harvest with grape sorting before the
vinification. Fermentation is made with strict
temperature control. 1 year maturing in oak barrels,
including 25% in new barrels.
A beautiful pale gold colour with brilliant green
The nose is rich with exotic fruits, and white flowers,
honey and vanilla aromas.
In the mouth, we have ripe fruit flavors, combined with
lemon and vanilla touches, ending in a long finish.
Pairs well with all seafood, white meats and mild
cheeses. Also great as an aperitif.
SERVICE TEMPERATURE AND AGEING
Wine to be served at 12°C / 53° F.
This wine is already enjoyable right away, but will
improve after a good ageing of 5 to 10 years.
